Some say that when fresh food is needed by costumers, it is modified atmosphere packaging that get into action and change the whole way in which we or a food supplier for that instance serves food.
We all use packed food, not always remembering the source of it or what happened while our food was in process between growth to serving it : we are used to fresh tropical fruits that are served in frozen Alaska, but not often come to think about the mechanism that allow it. So here it is : modified atmosphere packaging is what allows it, it is a major part of the food industry, allowing the manufacturers the ability needed.

trying to put the finger inside the package [ not literally…] we will find it contains atmosphere – not air but a similar composition of gases, that modified atmosphere packaging controls its composition and by that boosting the self preservation qualities of the atmosphere/gas inside the package. Take fresh cut fruits as a common example.
The state of the art machinery we have in the industry today, the advanced and hi tech equipment that we use for modified atmosphere packaging without man directly involved in the process, and without adding preservatives makes
what was once impossible – a world wide net of fresh cut fruits and of course, beside this example, many other food types to be served freshly.
When we come to think about mango in Siberia we see it as a function of your machinery and it alone : modify the atmosphere and you can send it anywhere within the time limits you expect.
Food packaging today is a field of expertise, second to none in its importance and adoptability to all needs.
